I have been the guy in a relationship like this before. You do have think positive and be faithful to the word of God. Trust your boyfriend because it sounds like he is a great guy. If you both are well grounded Christian it shouldn't be a real problem to have trust. The last thing you want him to do is think that you don't trust him because it makes it seems as if you guys are not going to make it.
You could try picking up some little activities are hanging out some of your college buddies at your school but you just have to trust that he is doing the right thing and it can be a little hard trying to work two jobs, school, and a GF. The best thing you can do for him is to not make him feel bad about doing something good because he may not talk to you once or twice a week. Trust God to be a way maker and put all your worries in his hands!! Sending you guys many blessings and i hope the relationship continues to blossom in a whole new way!

Abroad. Goto any good university in US/Canada/UK who has worldwide recognised. It will give you better job options and growth in career.

Talk to the Church. I came in through RCIA not knowing anyone. The Church found me a sponsor. I am certain they can do the same for your daughter, finding her loving and faithful godparents with a good bit of knowledge about the Church.

I don't know anyone who provides a whole course in such a subject. I believe that St Andrews University in the UK has a Greek degree but you won't be able to do that by distance learning

If you just want one course then the Midlands Bible College in England has a koine Greek course that is available. http://www.midbible.ac.uk
