I have had 4 art history classes, and I am going on my 5th. They are challenging, a lot to study and memorize, but they are also pretty interesting if you get a good professor. It is a good way to learn how to critique art, learn about different cultures, and not just art history but general history. I would recommend an art history class to anyone.

Impressionism. It's innovative, interesting, and a LOT of controversy is involved in the movement - basically the badasses of art!

I would take survey of art and culture, but I'm actually interested in that stuff. art appreciation sounds easier. I have a friend who took art appreciation, though, and she said it wasn't a lot easier than her other courses.

You are correct, it is not like you are taking 5 organic chemistry classes. However, no matter how you look at it, 6 classes is going to take time and you are working one shift. You may find yourself having to devote time to your classes than you anticipate. In order to give you some free time, I would suggest you drop a class and expand her interests beyond art.
